Banana Bread Scones with Maple Glaze

Just like banana bread but with sweet crunchy edges and soft fluffy insides, these super easy banana bread scones made with Halo & Swoon organic Scone Dough mix make the perfect breakfast treat.

These banana bread scones are ridiculously good! They taste just like banana bread, but with sweet crunchy edges and soft fluffy insides.

They're super easy to make with our organic Scone Dough baking mix. But unlike banana bread, they only need 25 minutes to bake, and there's no need to wait until they're cool to eat them!

This is the perfect recipe for using up your overripe bananas, and they can be enjoyed for breakfast, brunch or dessert!

 

Banana Bread Scones with Maple Glaze

Serves: 8

Prep time: 15 minutes Cook time: 25 minutes

1 Halo & Swoon Scone Dough

1/3 cup coconut sugar or brown sugar

1 banana, mashed 

1 banana, sliced

1 tsp cinnamon

200ml plant milk, room temperature

2 Tbsp coconut oil, melted

gluten-free flour for dusting

Maple Glaze

50g icing sugar

2 tsp maple syrup

2 tsp water

 

Preheat oven to 200°C fan bake and line a baking tray.

Place scone mix in a bowl, add the sugar and cinnamon and stir well.

Add milk, coconut oil and mashed banana, and mix into a dough.

Sprinkle gluten-free flour onto the lined tray and turn out the dough. Sprinkle over a little more flour and shape into 8 round scones.

Place a couple of slices of banana on top of each scone.

Bake Scones in the centre of the oven for 25 minutes, scones are done when the edges have turned golden.

Mix the glaze ingredients together until smooth, then drizzle over the scones. Serve scones warm, spread with your favourite butter or spread.

Any leftover scones can be stored in a cool dry place for up to 3 days.

To reheat, cut in half and place until the grill for 5 minutes, or microwave for 30 seconds.
