Chocolate Chip Skillet Cookie

If you're a chocolate chippie fan then you're going to be blown away by this uber indulgent, Chocolate Chip Skillet Cookie recipe! Deliciously crispy cookie edges give way to a smooth velvety middle. Top with your favourite nice cream, give everyone a spoon and dig in!
The key to a good skillet cookie is a slightly undercooked centre. This ensures an amazing, melt-in-your-mouth texture, which is what makes a skillet cookie so indulgent.
Because skillet cookies are perfect for sharing straight from the pan, it means less washing up which is always a win! But if you'd prefer, you can also cut your skillet cookie into wedges for individual serves. Any leftovers can be stored in the fridge for up to 5 days, and enjoyed warm or chilled.

Chocolate Chip Skillet Cookie

Prep time: 10 minutes Cook time: 12-14 minutes
Ingredients
1 Halo & Swoon Choc Chip Cookie mix
1/3 cup (70g) coconut oil, melted
1/4 cup (60g) plant milk, room temp
To Serve
Your favourite nice cream or yoghurt
Preheat your oven to 170°C fan bake and lightly oil a 20 cm cast iron skillet pan with a little coconut oil (a 20 cm brownie pan will also work).
Gently melt the coconut oil and leave to cool.
Place Choc Chip Cookie mix in a bowl, add milk and coconut oil, and stir until combined.
Spread cookie mixture evenly into your prepared skillet pan.
Bake in the centre of your oven for 12-14 minutes.
Skillet cookie is ready when the top is set and dents only slightly when pressed. The sides should be crispy but the middle still deliciously soft.
Serve warm, straight from the pan with scoops of nice cream or yoghurt on top.
