Molten Chocolate Puddings

Serves: 6
Prep time: 20 minutes Cook time: 10 minutes

1/2 packet of Halo & Swoon Chocolate Cake Mix

6 individual pudding moulds or ramekins

2 Tbsp coconut oil, melted

2 Tbsp raw cacao or cocoa powder

To Serve:

Your favourite ice cream or yoghurt

Preheat your oven to 180°C fan bake.

Coat the insides of your pudding moulds or ramekins with a layer of melted coconut oil using either a pastry brush or paper towel.

Add a spoonful of cacao or cocoa powder to each mould and shake to coat. Tip the loose powder into the next mould and repeat, adding more cacao/cocoa powder as needed.

Make up half a packet of Chocolate Cake mix according to the instructions on the packet e.g. weigh out half the dry mix and add half the quantity of wet ingredients.

Fill the pudding moulds three quarters full with Chocolate Cake mix and bake in the centre of the oven for approximately 10 minutes. You may have to do a test run to determine the exact cooking time for your oven to achieve a molten centre.

Puddings are ready when they've formed a crust but are still liquid inside. Rest puddings for 1 minute, then turn out onto a serving plate and top with your favourite ice cream or yoghurt.
