Rosemary & Sea Salt Seeded Crackers

Adding fresh rosemary & flakey sea salt to Halo & Swoon's Seeded Cracker mix creates the most divine tasting herbed crackers that are gluten-free & vegan.

Rosemary and flakey sea salt is a classic flavour combination that goes beautifully with our Seeded Crackers mix.

If you can't get your hands on fresh rosemary then dried rosemary works well too. Seeded Crackers already have just the right amount of NZ sea salt in them, but if you like your crackers extra salty then try sprinkling a little flakey sea salt over the tops just before baking.

Rosemary & Sea Salt Seeded Crackers

Serves: 32

Prep time: 15 minutes Cook time: 25 minutes

1 Halo & Swoon Seeded Crackers mix

3/4 cup + 1 Tbsp (200g water)

1/4 cup (50g) olive oil

1/4 cup fresh rosemary, chopped

1 Tbsp flakey sea salt (optional)

Preheat oven to 180°C fan bake (200°C conventional), and line 2 baking sheets with paper or mats.

Pull the rosemary leaves off the woody stems and chop finely.

Pour mix into a bowl, add rosemary, water and oil. Mix until it comes together.

Divide the mix between the two baking trays.

Roll each mix out between 2 sheets of paper until it’s approximately the thickness of the seeds.

Sprinkle with sea salt if desired.

Use a large knife to mark into crackers, then leave to sit at room temperature for a minimum 30 minutes to allow rice flour to absorb the water (this creates smooth crackers).

Place trays in centre of oven to bake for 20-25 minutes, or until lightly browned.

Remove crackers from oven, allow to cool before storing in an airtight container.
